The eclairs are one of the most classic and representative french desserts. There are so many recipes for, and each of them seems perfect until the next one.
I haven't yet decided which one is my favorite, and I will most probably
never will. But I am keen on testing and testing until one day I get to
find my perfect eclair...well that shouldn't be such difficult job. Classic eclairs are chocolate, vanilla and coffee ones, however the pistachios and raspberries are superb variations, but you can always go wild and make them as you wish.
Looking at these pictures, I am pretty sure that each of them is
perfect in it's own way. Since I can't run now into the first pattiserie
and have some...I will just get to dream of how delicious they must be

I grew up knowing eclairs as a traditional Sunday treat, as we used to go to the cafeteria on Sundays. And, until today, eclairs are to me a special event type of dessert.
