I have been experimenting lately a lot the lemon flavor, and that means I baked a lot of lemon tarts and tartlets. Which can only bring joy to me and my husband, but let's hope no extra kilos :)
And so inspired by some of his recipes I came up with mini lemon tarts, which I baked them using a muffin tray, and one big lemon tart. I have used the same base, the french tart base...and it is the best tart case I have ever tried, and easy like Sunday morning, but different lemon fillings.
One adapted from Natasha from Butterbaking, and I believe that I should have used more lemon as it lacked in flavor, but something to learn for next time. Still it was very good and texture wise is very practical, considering I want to take these tarts to my stall and caffees.
The second one, was from David's recipe and it was mind blowing lemonish. SOooooo much lemon flavor that it was impossible to stop eating it. However texture wise, might cause some troubles when transporting. But you know...if there's a will there's a way :)
What I want to learn from this experiment is how to come up with the perfect mix between flavor, texture, size and aspect. But I guess that once I discovered that you will find the lemon tarts on my stall. Will keep you posted though.
