Sweet little Madeleines !!!!

How much I am in love with french patisserie, I guess you already assume that. But I will state it again. I am in love with french patisserie. Today, I decide that I can no longer let a day pass and not try to do my first Madeleine.

I loaded myself with with lemons, eggs, BUTTER, patience and some good recipes and voila !!!!  Few hours later, they were all...GONE ! Cos people around me just sniffed them all in few seconds :)) Well, that can only be good, I thought and smiled. And they were. Super yummy gummy delicious :) Seriously !

I have chosen to try the Little Paris Kitchen (Rachel Khoo) recipe (here it is), lemon madeleines with raspberries, but I left out the lemon curd. Simple with delicious raspberries and a second batch with dark chocolate inside which melted and were great in contrast with the sharp lemon taste.

Now, I have learnt a few tricks while baking them, and I can tell you for sure that they are a treat, for everybody, every age, every kind of taste. It's tea time treat.

The main ingredients are : BUTTER (loads of it;) eggs, sugar, flour, baking powder, a bit of milk and bit of honey. One good tip is letting the dough to rest in the fridge for few hours, it makes very much a difference. As the butter will go cold and harden and when you bake it, the Madeleine will pop up really beautiful.

Of course there can be many variations on what to add into the dough, as almonds and nut flavors have always been favorite, also you can add basically anything you think would go well.
