It's getting hot these days, isn't it ? All I want to do is lay in shade, drink something icy, and let the day pass by...
However where we are now, we have a super cute garden that happens to have some berries bushes, precisely red & black currant bushes.
So, I can't let things just die without being used, I picked up the berries and made something that is a perfect dessert for this weather. Not too sweet, not too heavy, a bit sour and you serve it with cold plain yogurt.
It is a crumble tart.
So I made a good use of the currant, I also added some kiwi since we had them, and the top crumble is made with oats & nuts. Super easy super tasty.
I give you the recipe.
Base :
Flour 170g
Sugar 32g
Cinnamon 1/3 teaspoon
Butter 110 g (melted)
Put the dry ingredients in a bowl, melt the butter, add it on top and mix to form a dough. Even though will not become a perfect ball shape, it must be like this. Crumbly. So put it into your pie form (23 cm), and press it to stick together. Bake it for 15-20 min at 180 C.
Filling:
Currant 2 cups
Kiwi 3 pcs
Honey 1 tablespoon
Sugar 1-2 tablespoon
Mix everything together and let sit for as long as you bake the base, and after while it is cooling. Once the base has cooled, I strained the filling so that I take out the sugary sirup.
Crumb topping:
Flour 30g
Brown sugar 40g sugar
Oats 30 g oats
Nuts (as many as you like)
Butter (melted) 30g
Mix all of the above and create a crumble with your fingertips.
Once the base was baked and cooled, pour in the filling, the crumble topping and bake @ 180 C for 35-45 min or until the filling is bubbly.
Let cool and serve with yogurt or vanilla ice cream.
