I love tartlets. And I am very good at making them. The berries love tartlets, the lemons love tartlets, even chocolate and caramel love tartlets. So here they come....The empire of tartlets.
I had the great honor to bake more of them and of different types, for the farewell party of a great friend. A kind person that filled our lives with joy and adoration for the past 5 years. Now, the friend is moving back to his home country, so at the farewell party I decided to bring a share of my joy, and that be a nice box of tartlets.
I baked 4 different types.
- Chocolate ganache & caramel
- Lemon curd
- Blueberries & pastry cream
- White chocolate ganache & caramel (chocolate dough)
Well, after doing them I can come with pros and cons of this particular batch :
Pros : Fabulous look, intense flavour, the white chocolate ganche a super success, the usual darkchocolate & caramel mix is match made in heaven, blueberries are perfect for such size tarts, and the lemon curd..super lemonish as usual :)
Cons : the french dough was too dry, and I know why...mostly because I made a big quantity of it at the same time, and it dried out, butter lose while waiting for all the mini tarts to bake. Well lesson learned...I guess that's how one get's experience.
They look great, don't they ? :)
I am very passioned about making these super cute little bite size tartlets. My bakery is going to sell them, no worries, in different shapes, fillings and for any occasion.
On a different occasion, I baked for a friend as a birthday gift some strawberries tartlets, and they turned out tasty and very good looking :)
